This week’s free recipe is Baked Pizza Chicken — a real household dinner you can cook tonight, then plan the rest of the week around.

A quick and easy weeknight meal combining the flavors of pizza with tender baked chicken. Topped with sauce, melted mozzarella, and pepperoni.
Most weeknights fail at 5pm because dinner is still a question. A recipe like this works when it is already on the calendar, the shopping list is already built, and you are not inventing a second meal tomorrow from whatever is left in the fridge.
35 min · 4 servings
Ingredients
- 2 Chicken Breasts
- 1 ounce Pepperoni
- 4 ounces Mozzarella Cheese
- ¼ cup Pizza Sauce
- ⅛ teaspoon Garlic Powder
- 1 tablespoon Italian Seasoning
- 2 tablespoons Olive Oil
- ⅛ teaspoon Salt
Directions
- Preheat the oven to 400ºF. In a small bowl, stir together 1 tablespoon Italian Seasoning, ½ teaspoon Garlic Powder, ½ teaspoon Salt, and 2 tablespoons Olive Oil.
- Place the 2 Chicken Breasts on a cutting board and cover with a piece of plastic wrap. Use a mallet or rolling pin to pound the chicken to an even thickness, about 3/4-inch thick.
- Place the chicken in a shallow baking dish or on a baking sheet, making sure it has at least an inch of space around it. Spread the oil and herb mixture over the surface of the chicken.
- Bake the chicken in the fully preheated 400ºF oven for 15 minutes.
- After 15 minutes, remove the chicken from the oven. Spread ¼ cup Pizza Sauce over the surface. Next top with 1 cup Shredded Mozzarella Cheese and 1 ounce Pepperoni.
- Return the chicken to the oven and bake for 5-7 minutes more, or until the internal temperature of the chicken reaches 165ºF. Remove from the oven and serve.
