Apple, Cheddar, and Walnut Salad with Cider Vinaigrette

Crisp apple slices, sharp white cheddar, and toasted walnuts go over tender greens with a quick apple cider and honey-mustard dressing. It's crunchy, a little sweet, and ready in 15 minutes, a nice fresh partner for roasted or braised fall dinners.

15 mins 6 servings

Ingredients

  • 6 cups Green Leaf Lettuce
  • 1 Shallot
  • 3 ounces Cheddar Cheese (White)
  • ¼ cup Dried Cranberries
  • ¼ teaspoon Kosher Salt
  • ½ cup Walnuts
  • 2 tablespoons Apple Cider Vinegar
  • 1 teaspoon Mustard (Dijon)
  • ⅛ teaspoon Black Pepper
  • 3 tablespoons Olive Oil
  • 1 tablespoon Honey
  • 2 Apples

Directions

  1. Toast the walnuts in a dry pan over medium heat, stirring often, for 4 to 5 minutes until fragrant. Let them cool, then roughly chop.
  2. In a large salad bowl, whisk the olive oil, cider vinegar, honey, Dijon, shallot, salt, and pepper until combined.
  3. Add the apple slices to the dressing and toss right away so they stay bright.
  4. Add the greens, cheddar, dried cranberries, and walnuts, and toss gently to coat. Serve right away.
