Ingredients
- 2 ¼ pounds Cod Filet
- 1 ½ teaspoons Fresh Dill
- 1 ½ Lemon
- ¾ cup All-Purpose Flour
- 2 cups + ¼ cup Panko Bread Crumbs
- 3 Eggs
- ¼ cup + 2 tablespoons Parmesan Cheese
- 1 ½ teaspoons Kosher Salt
- ¾ cup Mayonnaise
- ¾ teaspoon Garlic Powder
- 1 ½ teaspoons Paprika
- 3 tablespoons Dill Pickle
Directions
- Heat the oven to 450°F. Set a wire rack on a rimmed baking sheet and coat it with cooking spray.
- Pat the fish dry and season it with the salt.
- Set up three shallow bowls: flour in the first, beaten eggs in the second, and panko mixed with Parmesan, paprika, and garlic powder in the third.
- Coat each fish strip in flour, dip it in egg, then press it into the panko mixture. Lay the strips on the rack and mist the tops with cooking spray.
- Bake for 12 to 15 minutes, until golden and the fish flakes easily.
- Meanwhile, stir the mayonnaise, pickles, lemon zest, a squeeze of lemon juice, and dill together for the tartar sauce. Serve the fish sticks with the sauce and lemon wedges.
