Strips of mild white fish get a golden panko and Parmesan crust and bake on a rack until crunchy on every side, no frying needed. A quick homemade tartar sauce with pickles and lemon is ready while they bake. A kid-friendly weeknight dinner that adults love too.
Ingredients
- 1 ½ pounds Cod Filet
- 1 teaspoon Fresh Dill
- 1 Lemon
- ½ cup All-Purpose Flour
- 1 ½ cups Panko Bread Crumbs
- 2 Eggs
- ¼ cup Parmesan Cheese
- 1 teaspoon Kosher Salt
- ½ cup Mayonnaise
- ½ teaspoon Garlic Powder
- 1 teaspoon Paprika
- 2 tablespoons Dill Pickle
Directions
- Heat the oven to 450°F. Set a wire rack on a rimmed baking sheet and coat it with cooking spray.
- Pat the fish dry and season it with the salt.
- Set up three shallow bowls: flour in the first, beaten eggs in the second, and panko mixed with Parmesan, paprika, and garlic powder in the third.
- Coat each fish strip in flour, dip it in egg, then press it into the panko mixture. Lay the strips on the rack and mist the tops with cooking spray.
- Bake for 12 to 15 minutes, until golden and the fish flakes easily.
- Meanwhile, stir the mayonnaise, pickles, lemon zest, a squeeze of lemon juice, and dill together for the tartar sauce. Serve the fish sticks with the sauce and lemon wedges.
