Ingredients
- 3 cups Graham Cracker Crumbs
- 2 tablespoons Lime
- 8 Eggs
- 2 ½ cups Sweetened Condensed Milk
- ¾ cup Unsalted Butter
- ¼ cup Powdered Sugar
- ½ cup Sugar
- 1 cup Fresh Lime Juice
Directions
- Heat the oven to 350°F. Line an 8-inch square baking pan with parchment, leaving overhang on two sides.
- Stir the graham crumbs, granulated sugar, and melted butter until the mixture looks like wet sand. Press it firmly into an even layer in the pan.
- Bake the crust for 8 to 10 minutes, until fragrant and lightly set. Cool 5 minutes on a rack.
- Whisk the egg yolks until smooth, then whisk in the sweetened condensed milk, lime juice, and lime zest until thick and uniform.
- Pour the filling over the warm crust and smooth the top. Bake for 15 to 18 minutes, until the center is just set with a slight jiggle.
- Cool to room temperature, then refrigerate at least 2 hours.
- Lift out with the parchment, dust with the powdered sugar, and cut into 16 bars.
