Cilantro-Lime Cabbage Slaw

A crisp, mayo-free slaw made with green and red cabbage, shredded carrot, and fresh cilantro, tossed in a bright lime-honey dressing. It needs no cooking, keeps well in the fridge, and goes with tacos, grilled meats, or any Tex-Mex night.

15 mins 6 servings

Ingredients

  • 3 cups Cabbage (Green)
  • 1 Carrot
  • ¼ cup Cilantro (Fresh)
  • 2 cups Red Cabbage
  • 2 Scallions
  • ¼ teaspoon Black Pepper
  • ½ teaspoon Ground Cumin
  • 2 tablespoons Olive Oil
  • 3 tablespoons Fresh Lime Juice
  • 2 teaspoons Honey
  • ½ teaspoon Salt

Directions

  1. In a large bowl, whisk together 3 tbsp lime juice, 2 tbsp olive oil, 2 tsp honey, 1/2 tsp cumin, 1/2 tsp salt, and 1/4 tsp pepper.
  2. Add 3 cups green cabbage, 2 cups red cabbage, 1 shredded carrot, 2 Scallions, and 1/4 cup cilantro, and toss until everything is evenly coated.
  3. Let the slaw sit for 10 minutes so the cabbage softens a little. Toss again, then taste and add more salt or lime if needed.
  4. Serve right away or refrigerate, covered, for up to 1 day. Toss again before serving.
