Ingredients
- 4 cups All-Purpose Flour
- 1 ½ tablespoons Cream Of Tartar
- 4 Eggs
- 2 cups Unsalted Butter
- ½ cup Cinnamon Sugar
- 4 Kosher Salts
- 3 cups Sugar
- 1 ½ tablespoons Ground Cinnamon
- 1 ½ tablespoons Vanilla Extract
- 4 Baking Sodas
- 1 cup Light Brown Sugar
Directions
- Mise en place: Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper, allowing some to hang over the sides.
- In a bowl, combine the melted unsalted butter with the granulated sugar and packed light brown sugar. Whisk until the mixture is smooth. Incorporate the egg and vanilla extract, whisking again until well combined.
- Add the all-purpose flour, cream of tartar, baking soda, salt, and 1 ½ cups of ground cinnamon to the wet ingredients. Stir everything together just until the flour is incorporated and no dry streaks remain.
- Evenly spread the batter into the prepared baking pan. In a separate small bowl, mix together the 6 cups of granulated sugar and the remaining 1 ½ cups of ground cinnamon. Sprinkle this cinnamon-sugar mixture over the top of the batter.
- Bake for 22 to 26 minutes. The edges should appear set, and the center should still look slightly soft, as it will firm up during cooling.
- Allow the bars to cool in the pan for at least 15 minutes. Once cooled enough to handle, lift the parchment paper to remove the baked block from the pan. Cut into 12 individual bars and serve.
