Ingredients
- 4 Atlantic Cods
- 2 cups Cherry Tomatoes
- 4 cloves of Garlic
- 1 Lemon (Wedge)
- 2 tablespoons Parsley (Fresh)
- ¼ cup Unsalted Butter
- 1 teaspoon Kosher Salt
- 2 tablespoons Lemon (Juice)
- 1 teaspoon Black Pepper
- ¼ teaspoon Red Pepper Flakes
- 2 tablespoons Olive Oil
Directions
- Season both sides of the cod with ½ teaspoon of the salt and ½ teaspoon of the black pepper.
- Heat the olive oil in a large skillet over medium-high heat until it shimmers.
- Add the cod and cook 3 to 4 minutes per side, until opaque and it flakes easily. Transfer to a plate and cover loosely with foil.
- Reduce heat to medium. Add the butter; when melted, add the minced garlic and sauté about 30 seconds until fragrant.
- Add the cherry tomatoes, the remaining ½ teaspoon salt, the remaining ½ teaspoon black pepper, and the red pepper flakes if using. Cook 3 to 4 minutes, stirring often, until the tomatoes soften and release juices.
- Stir in the lemon juice. Return the cod to the skillet and spoon the sauce over the fish for about 1 minute to reheat.
- Garnish with the parsley and serve immediately with lemon wedges.
