Skillet Garlic-Butter Cod with Cherry Tomatoes

Flaky cod fillets are pan-seared and bathed in a vibrant garlic butter sauce with softened cherry tomatoes. This quick and elegant dish is perfect for a weeknight meal.

25 mins 4 servings

Ingredients

  • 4 Atlantic Cods
  • 2 cups Cherry Tomatoes
  • 4 cloves of Garlic
  • 1 Lemon (Wedge)
  • 2 tablespoons Parsley (Fresh)
  • ¼ cup Unsalted Butter
  • 1 teaspoon Kosher Salt
  • 2 tablespoons Lemon (Juice)
  • 1 teaspoon Black Pepper
  • ¼ teaspoon Red Pepper Flakes
  • 2 tablespoons Olive Oil

Directions

  1. Season both sides of the cod with ½ teaspoon of the salt and ½ teaspoon of the black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  3. Add the cod and cook 3 to 4 minutes per side, until opaque and it flakes easily. Transfer to a plate and cover loosely with foil.
  4. Reduce heat to medium. Add the butter; when melted, add the minced garlic and sauté about 30 seconds until fragrant.
  5. Add the cherry tomatoes, the remaining ½ teaspoon salt, the remaining ½ teaspoon black pepper, and the red pepper flakes if using. Cook 3 to 4 minutes, stirring often, until the tomatoes soften and release juices.
  6. Stir in the lemon juice. Return the cod to the skillet and spoon the sauce over the fish for about 1 minute to reheat.
  7. Garnish with the parsley and serve immediately with lemon wedges.
