Ingredients
- 1 ¼ pounds Sausage (Italian)
- ¾ Cherry Tomatoes
- 3 ¾ cloves of Garlic
- ¾ Red Bell Pepper
- ¾ Yellow Onion
- ¾ Sandwich Rolls
- 1 tablespoon Butter
- ¼ cup Chicken Broth/Stock
- ½ teaspoon Basil (Dry)
- ½ teaspoon Dried Oregano
- 1 tablespoon Olive Oil
- ½ teaspoon Salt
Directions
- Prepare ingredients: Slice the large yellow sweet onion. Slice the red bell peppers seeded and. Slice the green bell peppers seeded and. Mince the garlic. Diced, drain the tomatoes.
- In a large skillet, over medium heat add the olive oil and brown the sausages well but not cooking completely through. Set aside to cool slightly, then slice into two-inch slices on a cutting board.
- In the same pan, melt the butter and add more olive oil if needed. Add the yellow onion and green bell peppers to the pan. Cook for a couple of minutes until slightly soft but not completely done.
- Add the garlic, dried oregano, dried basil, salt, chicken broth, and diced tomatoes. Return the sausage back to the pan and cook until sausage is done, covering for a couple of minutes.
- Serve immediately plain or on rolls.
