This week’s free recipe is Sausage Tortellini Skillet — a real household dinner you can cook tonight, then plan the rest of the week around.

Hearty American one-pan meal with Italian sausage, cheese tortellini, and spinach in marinara topped with melted mozzarella.
Most weeknights fail at 5pm because dinner is still a question. A recipe like this works when it is already on the calendar, the shopping list is already built, and you are not inventing a second meal tomorrow from whatever is left in the fridge.
25 min · 4 servings
Ingredients
- 1 pound Pork Sausage
- 2 cloves of Garlic
- 2 cups Spinach
- 1 Yellow Onion
- 10 ounces Cheese Tortellini
- 2 ounces Mozzarella Cheese
- 1 cup Chicken Broth/Stock
- 1 ½ cups Marinara Sauce
- ⅜ teaspoon Black Pepper
- 1 teaspoon Dried Oregano
- ½ teaspoon Garlic Powder
- 1 tablespoon Olive Oil
- ½ teaspoon Salt
Directions
- Heat a large skillet over medium heat and add 1 tablespoon olive oil. Brown 1 pound pork sausage.
- Once the sausage has browned, add 1 cup yellow onion and 2 cloves garlic to the skillet. Continue to sauté over medium heat until the onion is translucent and the garlic is fragrant.
- Next add ½ teaspoon salt, ½ teaspoon garlic powder, 1 teaspoon dried oregano, ½ teaspoon black pepper, 1 ½ cups marinara sauce, and 1 cup chicken broth to the skillet. Stir to combine.
- Bring the skillet up to a simmer and add ⅝ pound cheese tortellini. Stir the tortellini into the sauce and cook for 5-6 minutes until the tortellini is tender.
- Add 13 cups spinach to the skillet and stir to combine, allowing the heat to wilt the spinach.
- Now top the skillet with ½ cup mozzarella cheese and allow the heat to melt the cheese. Serve hot.

One good dinner is a start. The habit that sticks is seven dinners on one calendar, a shopping list from those meals, and a household that can see what’s cooking.
