Ingredients
- 1 pound Pork Sausage
- 2 cloves of Garlic
- 2 cups Spinach
- 1 Yellow Onion, diced (about 1 cup)
- 10 ounces Cheese Tortellini
- 2 ounces Mozzarella Cheese, shredded
- 1 cup Chicken Broth/Stock
- 1 ½ cups Marinara Sauce
- ½ teaspoon Black Pepper
- 1 teaspoon Dried Oregano
- ½ teaspoon Garlic Powder
- 1 tablespoon Olive Oil
- ½ teaspoon Salt
Directions
- Heat a large skillet over medium heat and add 1 tablespoon olive oil. Brown 1 pound pork sausage.
- Once the sausage has browned, add the diced yellow onion and 2 cloves garlic to the skillet. Continue to sauté over medium heat until the onion is translucent and the garlic is fragrant.
- Next add 1/2 teaspoon salt, 1/2 teaspoon garlic powder, 1 teaspoon dried oregano, 1/2 teaspoon black pepper, 1 1/2 cups marinara sauce, and 1 cup chicken broth to the skillet. Stir to combine.
- Bring the skillet up to a simmer and add 10 ounces cheese tortellini. Stir the tortellini into the sauce and cook for 5-6 minutes until the tortellini is tender.
- Add 2 cups spinach to the skillet and stir to combine, allowing the heat to wilt the spinach.
- Now top the skillet with the shredded mozzarella cheese and allow the heat to melt the cheese. Serve hot.
