Ingredients
- ¼ cup + 2 tablespoons Cilantro (Fresh)
- 3 Limes
- 4 cups + ½ cup Jasmine Rice
- 4 cups + ½ cup Coconut Milk
- 2 ¼ teaspoons Kosher Salt
- 1 tablespoon Sugar
- 2 cups + ¼ cup Water
Directions
- Rinse the rice in a fine-mesh strainer under cold water, swishing it around, until the water runs mostly clear. Drain well.
- Add the rice, coconut milk, water, sugar, and salt to a medium saucepan. Stir and bring to a gentle boil over medium-high heat.
- Reduce the heat to low, cover with a tight-fitting lid, and simmer 15 minutes without lifting the lid.
- Remove from the heat and let stand, still covered, for 10 minutes.
- Fluff with a fork, then stir in the lime zest, lime juice, and cilantro. Taste, add a pinch more salt if needed, and serve warm.
