Ingredients
- 2 Atlantic Cods
- 1 cup Cherry Tomatoes
- 2 cloves of Garlic
- ½ Lemon (Wedge)
- 1 tablespoon Parsley (Fresh)
- 2 tablespoons Unsalted Butter
- ½ teaspoon Kosher Salt
- 1 tablespoon Lemon (Juice)
- ½ teaspoon Black Pepper
- ⅛ teaspoon Red Pepper Flakes
- 1 tablespoon Olive Oil
Directions
- Season both sides of the cod with ¼ teaspoon of the salt and ¼ teaspoon of the black pepper.
- Heat the olive oil in a large skillet over medium-high heat until it shimmers.
- Add the cod and cook 3 to 4 minutes per side, until opaque and it flakes easily. Transfer to a plate and cover loosely with foil.
- Reduce heat to medium. Add the butter; when melted, add the minced garlic and sauté about 30 seconds until fragrant.
- Add the cherry tomatoes, the remaining ¼ teaspoon salt, the remaining ¼ teaspoon black pepper, and the red pepper flakes if using. Cook 3 to 4 minutes, stirring often, until the tomatoes soften and release juices.
- Stir in the lemon juice. Return the cod to the skillet and spoon the sauce over the fish for about 1 minute to reheat.
- Garnish with the parsley and serve immediately with lemon wedges.
